Process - Fermented in an Italian Terracotta Amphora

On skins undisturbed for 7 months

Unfined, unfiltered and bottled by gravity with minimal sulphur dioxide added

Nose -More exotic characters like ginger and cardamom spice

Palate -Mouth-watering acidity and grippy textures. Nutty, briny characters that balance the grape’s inherent citrus fruit flavours

Food match -Its acidity goes brilliantly with anything remotely spicy, particularly Asian and seafood dishes, but it can also cut through greasier foods, such as pork dishes.
