Wayfinder Syrah is produced from a single, exceptional block which was part of the Estate’s original plantings in 1998.
The grapes were harvested by hand and destemmed into an open-top fermenter. The must underwent a 3-day cold-soak to bleed intense colour and soft, supple tannin from the skins, and then gently warmed prior to inoculation with ICV D80 yeast, a high-quality strain isolated in the Rhône Valley. The wine was pumped over twice/day during peak fermentation, with occasional punch-downs to break up the cap.
After 17 days on skins, the free-run was gravity-drained to 2- and 3-year-old French oak barriques. The wine was blended and bottled after 10 months in oak and saw extended bottle maturation prior to release.
