The fruit for this Sauvignon Blanc comes from our Wilgha vineyard. The decision of when to harvest was based on flavour, once the fruit had ripened into the spectrum of sub-tropical passionfruit characters. Picked early in the cool of the morning to protect the intensity and purity of aromatics, the fruit was crushed, destemmed and pressed without delay. After cold settling, the juice was fermented in stainless steel at cool temperatures and inoculated with a carefully selected yeast strain to retain and enhance fresh, vibrant varietal characteristics of Sauvignon Blanc. The wine was bottled early to preserve the freshness and liveliness which is unmistakeably Sauvignon Blanc.
