Producer and Winemaker

The Edouard Duval estate is managed by a team of experienced vintners who oversee the entire winemaking process, from vineyard cultivation to bottling. Their expertise ensures that each bottle maintains the house’s signature style and quality. By combining traditional Champagne methods with modern innovations, the winemaking team delivers a product that honors the region’s heritage while meeting contemporary tastes.

Vineyards and Micro Climate

Situated in the heart of the Champagne region, Edouard Duval’s vineyards benefit from a temperate climate characterized by cool temperatures and adequate rainfall. The chalky soils provide excellent drainage and impart a distinct minerality to the grapes. These conditions are ideal for cultivating Pinot Noir, the primary varietal used in their Saignée d’Eulalie Brut NV, allowing the grapes to develop balanced acidity and complex flavors.

Vinification & Aging Methods

The Saignée d’Eulalie Brut NV is produced using the traditional méthode champenoise, where secondary fermentation occurs in the bottle to create fine bubbles. The term “Saignée” refers to the winemaking process where the grape must is allowed to macerate with the skins for a short period, imparting a delicate rosé hue to the wine. After fermentation, the wine is aged on the lees to enhance its complexity and texture before disgorgement and final bottling.

Service Methods and Temperatures

To fully appreciate its aromatic profile and effervescence, serve this Champagne well-chilled at a temperature between 6-8°C (43-46°F). Utilize slender, tulip-shaped sparkling wine glasses to concentrate the aromas and showcase the fine bubbles. Pour gently to preserve the mousse, and enjoy immediately upon opening to experience its freshness and vibrancy.

Storage and Aging Potential

While non-vintage Champagnes like Saignée d’Eulalie Brut NV are crafted for immediate enjoyment, they can be stored for up to 2-3 years after purchase. Store the bottles in a cool, dark place with a constant temperature between 10-15°C (50-59°F), away from direct sunlight or vibrations. Keep the bottles standing upright to minimize contact with the cork. Proper storage will help maintain the wine’s quality until you’re ready to enjoy it.
