Product Description
Our quest to create an emblem for McLaren Vale means attention to the
smallest details. Vineyard parcels are selected from our ‘artist’s palette’- the
landscape of McLaren Vale- to capture aromatic spice, elegance and soft,
silky texture; all underpinned by the generous flavours of McLaren Vale.
Blend: 69% Syrah (Shiraz), 31% Grenache.
Late ripening Syrah from Clarendon delivers generosity and soft, silky
texture. Grenache from aged Blewitt Springs bush-vines is more medium
bodied and contributes asiatic spice and aromatic fragrance.
In the cellar, 15-20% whole bunches are added to the fermenter and the
remaining fruit is gently destemmed (not crushed) and sorted to remove any
shrivelled berries. Cold soaked for 5 days prior to the beginning of extended
natural fermentation (no yeast added). Gently plunged by hand (Grenache)
or pumped over (Syrah) with the aim to minimising over-extraction of
aggressive tannin and other undesireable elements. Basket pressed to aged
French oak (300L and 500L). Aged on fine lees with minimal sulphur
additions before racking in October 2016 and July 2017. The components
were blended together and bottled in September 2017 sans filtration.
Wine style objective: Capture McLaren Vale’s generosity of flavour with a
light touch ensuring the retention of spice, fragrance and aromatics. Scents
of little blue flowers (lavendar and violets). Blueberry and blackcurrant fruit
profile. Long, soft, silky texture. We believe that the textural element holds
the key to fine wine.
