Steintal, formerly Weingut Benedikt Baltes, takes its new name from two defining features of the Churfranken — Stein (red sandstone) and Tal (the steep, terraced slopes). The wines are singularly cool, slender, taut, and sculpted because Benedikt thinks of them not in terms of other reds, even Burgundy, but of riesling. “Good pH, fine extraction, and reductive methods” are, he says, crucial to achieving the level of finesse and detail that mark the wines. as of 2018, produced with native yeasts and without filtration these wines have an alluring strength, with delicate fruit and aromatics, grip and depth.
This wine is selected from the oldest vines in the
Grosses Gewächs vineyard on Bichofsberg in the
village of Großheubach. The uniqueness of this red
sandstone terroir is elaborated by native yeast
fermentation and elevage in Klingenberg barrique to
reveal an unbelievable combination of structure,
coolness and balance. If you question the pedigree of
German pinot noir, this wine will convince you.
