palpitations, poured into every bottle on a
never-ending hunt for perfection. As soon as
we tasted the three wines, we knew they truly
reflected aspects of who JO is – stylish, low key,
minimalistic, authentic and of great character,
strength and magnetism. These wines shine with
understated elegance, personality and integrity,
are proudly named in her honour.
TASTING NOTES
Colour
Dark red with crimson tone.
Nose
Delicated aromas of cherry and mint with hints
of toast and spice.
Palate
Rich black fruits and berries complemented with
elegant oak and a nuance of chocolate.

Food Recommendations
A lovely accompaniment to French cheese or
charcuterie, this is also a perfect wine for big
f
lavoured meals like roast meats and hearty
pasta. The trick is to balance the beautiful
intense flavours with rich, flavoursome dishes
that will hold their own with this gorgeous wine.
WINEMAKING
Winemaking note
These Cabernet vines are gown along the
banks of the Goulburn River, the sandy soils
accentuating the grapes flavour and colour. The
grapes are picked at their peak ripeness and
brought into the winery where fermentation
occurs and the wine is gently turned over every
8 hours. This gentle extraction aims to find the
perfect balance between fruit flavour, tannin
and structure. The wine goes through natural
malolactic fermentation and post racking is
tucked away in French oak puncheons. After
regular tasting and once the wine has reached
its ideal balance, select barrels are blended
together and put into bottle.
