2020 OLD VINES CABERNET SAUVIGNON
The 2020 Hollick Cabernet Sauvignon OV is made from a selection of fruit from our older Cabernet
Sauvignon vines (OV). It is grown on shallow terra rossa soils in the Neilson’s Block and Wilgha vineyards
in Coonawarra, planted in the 1970s and 1980s.
The 2020 vintage can be characterised by warm sunny days and cool nights providing the perfect,
even ripening conditions for our famed Coonawarra Cabernet.
Our Cabernet Sauvignon was picked gradually at optimum ripeness from late March to late April. Exceptional colour intensity and vibrant fruit character are the hallmarks of this vintage. In the winery, individual parcels of grapes were handled carefully to retain intense fruit flavours developed
in the vineyard. Subsequent maturation in French oak (20% new) provides the 2020 Cabernet Sauvignon with structure and presence on the palate.
Dense pitch black heart with a deep dark red black tinged hue. Ripe blackcurrant, black cherry and liquorice scents leap out of the glass followed by some cigar box, black olive and spice. Rich and full bodied, succulent blackcurrant and liquorice fruits drive the palate with cedary tobacco, spicy black olive and dried herb characters lurking beneath. Ripe sturdy tannin structure. Amply powered it concludes long and bold.
