Selectively and by hand – the grapes for the Dreissigacker Riesling

The grapes for the Dreissigacker Riesling come from biodynamically cultivated vineyards around Bechtheim and Westhofen. As usual at Dreissigacker, we always attach great importance to gentle processing in the production of our wines. After the selective harvest by hand, the Riesling grapes are transported to the winery as carefully as possible in small standard containers.

Matured with finesse – a Dreissigacker Riesling full of depth and structure

Just as carefully as in the vineyard, the wine is aged in the cellar. The preliminary clarification is carried out only by sedimentation, we do not need to add treatment agents and, as always with Dreissigacker, the grapes are transported exclusively with the help of drop pressure. Out of conviction, we do not use pumps, as this would only put unnecessary strain on the wine. The fermentation was spontaneous, with whole berries deliberately fermented, which give the Riesling a lot of depth and structure. 90% of the wine was stored in stainless steel barrels and 10% in double barrels.

The Dreissigacker Riesling rested on the full lees for 6 months and then lay on the fine lees until it was bottled. Due to the partial storage in the wood and the long yeast storage, the acid structure typical of the Riesling grape variety is very nicely integrated.

Dreissigacker Riesling with seasonal dishes

The fresh and fruity Riesling goes perfectly with a salmon tartare with fried green asparagus. As a vegetarian option, an Italian mushroom risotto harmonizes with this wine. The creamy risotto together with the slight spiciness of the Dreissigacker Riesling results in a wonderful food pairing.
