Gonzalez Byass Jerez Elegante Fino NV x 12

From the producers of Tio Pepe, Elegante Fino Sherry is produced from the second pressing of Palomino grapes, grown in the chalky Albariza soils of Jerez. Following fermentation to roughly 11% alcohol the wine is fortified to 15.5% alcohol where it then enters the Elegante Fino solera. The humidity and cool temperature in the cellars then allow a layer of flor yeast to form on the surface of the wine, creating the wine's distinctive aroma and character. The wine remains in barrel for a minimum of 3 years as part of the traditional Solera system. Elegante fino is pale golden in colour, crisp and dry on the palate, and features floral pear aromas with a subtle refreshing finish.
