Tasting Notes
This wine shows spicy aromatics, white stone fruit, citrus rind notes, fresh herbs and hints of roasted almonds all combine to give an enticing aroma. Bright and zesty palate showing pear, light stone fruit and ripe limey citrus fruit flavours, along with nuts and hints of peppery rocket. The wine has a varietal waxy texture but also a zesty acidity that carries the flavours into a lingering finish.
Winemaking Notes
The grapes were harvested in the cool of the morning and gently pressed off skins.
We aim to capture the natural flavours of the variety and do so by handling the wine gently throughout the winemaking process. Fermented relatively cool to capture aromatics and a small portion of the wine finished ferment and was aged for 3 months in barrel to soften the acid from this cool vintage.
