- Aroma, A vibrant nose of florals, dark cherry and spice notes.
- Palate, dark cherry fruits combinbing with blueberries and mulberry notes. It has a lovely textured palate with a lingering finish with spice notes and cocoa.
- Food Pairing, Ricotta and Spinach Cannelloni.
Winemaking Notes
Sourced from several vineyards from 3 sub regions of McLaren Vale (Seaview, Blewitt Springs and Clarendon), resulting in complexity in blending. Each parcel was harvested and fermented separately on skins for 7-10 days.
Once fermented to dryness, fruit was presed off skins and transferred to a combination of new, second and third use French oak barrels. We want to see the perfurme, the vibrancy and the bright fruit characters come to the fore.
Ageing Potential
This wine drinks well young, but will be at its peak in 5-7 years.
