Noir d'Eulalie is a blanc de noirs made exclusively from Pinot Noir from 3 parcels located on the top of the hill. Approximately 40% of the wines are aged in Demi-Muids Bourguignons.

It is a rare and special Champagne, the fruit of a plot-based and secular work where the singular expression of pinot noir in massal selection shines on our terroir of oyster marls. 

A stimulating Champagne with a dry, chalky back drop, crisp acidity and a quite lean, oily textured finish.

A satiny mousse subsides to reveal a pale straw gold tinged core that has a gentle flow of bubbles streaming through it. Pronounced yeast lees and baked bread aromas mix with hints of strawberry, brioche and oily toast like notes. The stimulating palate features baked bread, yeast lees and oily toast nuances over delicate pear and strawberry fruits. Dry, chalky back drop with crisp acidity leading into a quite lean, oily textured finish.

Fresh and concentrated with aromas of dried citrus zest, walnut, dried apricot and cocoa. Some lemon and lime, too. It’s medium-bodied with bright acidity and a fine, sleek mousse. Saline and biscuit notes to close. Drink now.
