vines and honouring the site’s original name.
Vintage
The 2021 vintage was well staged with healthy
vine canopies and soil moisture thanks to
good winter and late spring rains. The sum
mer months were predominately dry, partic
ularly closer to and during harvest. 2021 was
also very mild, with Clare really showing off its
cool nights. Moderate yields rounded out what
is one of the best vintages of recent years.
Winemaking
From the stony northern rows of a block of
Grenache planted in 1920, the low yielding
vines were hand-picked on the 24th March,
2021 at 13.6 Baume. A third of the bunches
were placed directly into an open slate
fermenter and the balance loaded on top via
the crusher/destemmer. The fruit was then
left to ‘soak’ for four days before yeast
inoculation.
Cap management via twice daily hand plunging
ensured a gentle extraction. Ten days
post-harvest the wine was pressed off skins
using a basket press. Malolactic fermentation
and maturation for 12 months occurred in 1-
and 3-year-old French Oak Puncheons.
Minimal racking occurred throughout its time
in barrel, followed by one filtration and
bottling.
