WINEMAKING
Winemaking note
This wine is sourced from grapes grown in our
cooler King Valley vineyards, based in the high
country of Victoria. The parcels of fruit were
harvested separately over a three week period
in March. Picking and crushing was done during
the cool of the night to maintain fruit freshness.
Fermentation at cool temperatures for 14 days
in stainless steel fermenters has helped enhance
the pure, fresh clean flavours. Maturation on lees
enhances the mouth feel and complexity of this
wine.
