Winemaking Notes
The grapes have quite complex flavours in the vineyard with nice earthy and spicy notes. We aim to preserve these with minimal intervention in the winery. After a 10 day ferment on skins, the wine was transferred to older French oak barrels to preserve the fruit characters.
Fruit was picked in the early morning to retain freshness and retained as whole berry. Fermented on skins for 7 days in an open fermenter using wild yeasts. Once fermented to dryness, fruit was pressed off skins and transferred to older French oak puncheons and hogs heads. No new oak was used.

The Small Batch Release (SBR) wines are our winemaking playground, much like a test-kitchen where we can experiment with smaller ferments and hone our craft on these different and exciting grape varieties.
As delightful as these small batch wines are, there isn’t enough to share, so our wine club members get first access.
