Wayfinder Syrah 2021 x 12
Product Description
Brilliant crimson. Vivid red fruit underscored by herbal, savoury notes, wild berry, spice and pepper. Lovely poise and presence here... serious, compact and confident.
Wayfinder Syrah is produced from a single, exceptional block which was part of the Estate’s original plantings in 1998.
The grapes were harvested by hand and destemmed into an open-top fermenter. The must underwent a 3-day cold-soak to bleed intense colour and soft, supple tannin from the skins, and then gently warmed prior to inoculation with ICV D80 yeast, a high-quality strain isolated in the Rhône Valley. The wine was pumped over twice/day during peak fermentation, with occasional punch-downs to break up the cap.
After 17 days on skins, the free-run was gravity-drained to 2- and 3-year-old French oak barriques. The wine was blended and bottled after 10 months in oak and saw extended bottle maturation prior to release.
