 Only made in exceptional vintages, Cabernet Sauvignon is one of the Clare Valley’s best varieties, and when it reaches its greatest potential, it rivals Riesling.


Winemaker Notes

Good winter rain allowed soil profiles to be full, giving the vines a great start to the growing season. A remarkably cool summer followed, providing perfect conditions for healthy balanced vines. The long ripening period produced fruit with a perfect balance of good colour, high natural acidity, and concentrated flavours.

Only made in exceptional vintages, Cabernet Sauvignon is one of the Clare Valley’s best varieties, and when it reaches its greatest potential, it rivals Riesling.

Aging Process

Wild yeast, closed fermenters. Maturation: 10 months in French barrique, 11% new

Tasting notes

Concentrated, bright, fleshy red and blue fruits carry through to the palate. Texture and weight are slinky, seductive, and seamless with great flow. The finish is long and balanced showcasing blackcurrant, dark chocolate and super fine chalky tannins. Classy Clare Cabernet at its best.

Aroma

Slightly reserved at first and benefits from some time to open up. Blueberry and blackcurrant immediately come to the fore. Whispers of cedar oak and tomato leaf as typical from our site.


Pair it with perfectly/- accompanied by a butterflied leg of lamb.
